Sommelier of the Southern Sun group, Miguel Chan: "Too many people taste wine very subjectively. They look at the label or they look at the price, straight away before tasting they've already made their mind up that it's a great wine because it's expensive or the label looks great or they've heard about the producer. It shouldn't be that way. The impartiality and the objectivity of tasting wine is one of the most important aspects of being a sommelier today. It's about being, and having the freedom to decide on a particular wine with the story behind it...."
