"When we started to do the research we knew that Gin is our preferred drink as consumers and we realised that with Gin we could use our local Botanicals," says Martin Murray of Dunnet Bay Distillers. "We could create a spirit that captured the flavours of our area but also the stories and the legends of our area. So we believed Gin was a great product for because it was something that could showcase our area and our talents." Martin is talking about how him and his wife started the Dunnet Bay Distillery in a small coastal town in the North of Scotland. The success story of this Distillery is so inspirational and it is wonderful to hear about their new venture to restore a 200 year old mill to be able to produce whiskey on the site.
