Winemaker Callie Louw - Porseleinberg wines - The natural process of winemaking from wine to label.
"What I like to bottle, is something that's from this place, one hundred percent! It's not been tweaked, it's not been manipulated..." says winemaker Callie Louw of Porseleinberg wines. At Porseleinberg farm, Callie is using natural fermentation processes to make the Porseleinberg wines. He is explaining how he is treating the soil and using organic methods to keep the process of wine making as natural as possible. He feels that this process is an ongoing and a long term way of doing. To add to this natural process, Callie also prints the labels of every bottle with an old printing press on the farm. For Callie, the organic way of making wine is a mindset and not a marketing strategy. He is also involved in the wine making at the famous Boekenhoutskloof winery where they follow the same organic principles of winemaking and the treatment of the vineyards.
